strawberry glaze










~strawberry sweetheart in the making~

  • small diced riped strawberries
  • sponge rosettes soaked in cabernet sauvignon wine
  • italian meringue( best for non-baked recipes, as the egg white will be heated to food safety temperature by the rolling boil sugar)
  • whisked up egg yolks, till ribbon consistency at maximum whisk level
  • whipped cream, remember dont over whip the cream as you might break the fats in the cream and the dessert will not be smooth*, and when folding in the italian meringue make sure italian meringue is given time to cool off while still mixing in the mixer. As the heat from meringue will break down the whipped cream and give an awful grainy texture.
  • strawberry glaze, bain marie method. after chilling and letting the mixture to set. coat the glaze on, then let it chill again to set.
  • and lastly beautiful strawberry garnishes. (will be done soon)
